Missed photo op!!!

I guess I’m still getting into this blogging thing because yesterday would have made for the perfect photo.  As Colin was caught up with his photoshop work and the weather wasn’t perfect for photography he decided to start preparing the RV for the trip south.  First he emptied everything out of the RV basement and out of the shed.  Then he went under the house to pull out all kinds of stuff we need for Mexico. The yard was a mess, piles everywhere but within a few hours he had it all organized.  He even made certain to leave room in the middle of the basement for me to put all my cases of wine that I’ll buy in the US. Some stuff is set aside to put into the car.  He was happy to get this chore done and not have to do it in the wind and rain of October.

I have so much to do myself to prepare but can’t quite get going on the to do’s.  I really want to get there, see my plants, get more plants and to just sit in the warmth of the sun.  But first there are hours of desk work re the company business, shopping, especially natural health products, a refill of my huge first aid basket, ordering both the medical & Mexican insurance, seeing the vet and getting US dollars and Pesos and so on.  I am torn between going ahead now and buying or waiting a bit longer just in care the dollar goes up.  Then there are the grocery items that you can’t get south of the border like shredded coconut absolutely required to make coconut shrimp.  You can buy a whole coconut,  heck you can just go knock it off the tree but nowhere can you find it shredded.  Little things like pickles, relish, Claritin, etc. are impossible to find in Mexico.  And then there all those items needed to complete special recipes for pot lucks or happy hour.

This is what Kelowna is like in the winter. Because of the moisture from so many lakes, low laying clouds are formed and the only way to see the sun is to head up to the ski slopes. I say hit the road for Mexico.

Actually this is what we are experiencing today with a similar forecast for the week ahead!  Okay Contessa….time to start preparing.  Move it girl.

  1. Oh yeah! coconut shrimp, do you have a good recipe that you can share? And of course getting ready for Mexico is fun to do.
