Catch up…

Last Tuesday after the vet I went over to RV2, ( Tres Amigos RV Park is divided into 2 parks, as it expanded ) for happy hour while Colin stayed with Carmeh and played his guitar.  This was not a regular happy hour but rather a fund raiser organized by RV2.  We RVer’s here at Tres Amigos become involved in the local community during our stay here.  One thing we all do is bring down lots of used clothing, shoes, blankets, towels, anything we can fit into our rigs.  Mary, our local massage person, originally from Colorado but now a fulltime  Isla resident has come to know who needs the most help and has created a distribution system.  As anywhere else in the world there are poor areas and really poor areas in a community.  You may recall my post about how some of these people are building homes out of plastic pop bottles and sand.

The other thing we bring down are school supplies which are delivered to the local schools.  Toys are also brought down and a special RV couple organize their distribution through a church at Christmas time.  The main thing we do is collect money to create food hampers for 40 families here on Stone Island.

In addition to donating money, many of us donate items that we then sell raffle tickets for. Susie in RV2 then hosts a happy hour and the tickets are drawn, prizes distributed. Lots of fun and we are doing it again on the 20th. If any of you would like to donate money for the hampers or to purchase more toys just let me know.

After the happy hour I went home to make dinner for Colin and myself as I made sure not to eat too much.  The vet today had given us a recipe for dorado ( mahi – mahi ) which I wasn’t sure about  but in the end it was so delicious that I can hardly wait to make it again.

First slice an onion, fry it in butter ( not oil ) with a splash of wine, then when cooked add maybe a cup or more of chopped parsley (not cilantro), let it cook a bit then place the dorado fillet on top of this mix, place more parsley on top of the fish and cover the entire pan, turn the temperature to low and let the dorado cook.

As this was the end to a very hectic day, we simply added a baked potato and broccoli to the meal.

I think I overcooked the onions and I would recommend the same thickness of fillets being used for even cooking.  We used the left overs the next day in a burrito with added salsa and queso.  So good.  Who knew, a vet who cooks!!

      Connie….I’m sure it will taste great with the flounder.

      George….no I am not sexist at all. Just didn’t except to get a recipe from a vet during a visit.

      Susie…but more calories that way:) Great news about the amount of monies raised to date.

  4. Now Contessa, if the vet was a woman you would not have made that comment?
    I was a forklift driver and union steward before I opened my own restaurant because I liked to cook.
    Dinner looks delicious and such an easy recipe, thanks for sharing.
