Que pasa
We are so aware that our days here in paradise are numbered. Soon it is time to start packing up and to start the long drive back to Canada. Time is short and each hour is precious. I seem to be seeing things through different eyes, wanting to retain all that I see. You have likely noticed that from my last few posts. We headed into Mazatlan for the second time within a few days, unheard of for us. However we needed to pick up a few gifts and some cheese at the Mercado.
We also stopped for our final shrimp burger at Tony’s. It was just really good, not outstanding as when we had it last in January with Chris and Juan. I also picked up two cheap day dresses that I like to wear. A quick trip to town and back and we also picked up our clean laundry once back on the Isla. It is so inexpensive to have our laundry done weekly, why ever would I want to do it myself. I will miss this luxury when we get back home.
I have finally caught up with my paper work for my Dad’s estate. Nothing more can be done until I get back to Canada and sign some legal papers. Fortunately the sale of the condo and the van have been completed with no hitches. It looks like my last few weeks here on the Isla will be computer and telephone free unless I chose to use them 😮
As our daily veggie truck arrives it makes a particular noise, a high pitched double siren sound, to let us know he has arrived. We can hear him from a block or more away as he stops at other homes along the road. Often we are inside doing early morning tasks and so the girls are inside also, they just stay near us wherever we are. While Colin was in Culiacan I made an observation. As soon as I heard the veggie truck whistle, Caeli did also and would dash down the ramp and to the back gate. At first I thought it was a coincidence but I began to observe and take note. As soon as she hears the signal she heads to the gate where I go out to the truck. I don’t buy something everyday but often enough. No matter whether I leave the RV or not she does and runs to the gate. Very very cute.
I fancied a soft boiled egg a while back and as I haven’t cooked them for a while I Googled ‘how to boil a soft boiled egg’. I read a few of the links that came up and choose one. The eggs were simply excellent. Over the past month I have tried this method at least five times and each time the eggs were perfect. So if you want to try a different method to soft boil your eggs, click here.

Was wondering what that cheese is like ?
Good to hear you can relax for the last few weeks.
Good morning Kelly, the Chichuahua cheese is semi soft with a lovely creamy texture that melts very nicely. it is said to resemble a mild cheddar. However there are different brands all with a variety of tastes, we prefer the Santa Rita brand.
So glad you can enjoy your last bit of time there in relative peace. You need it!
Thanks Cheapchick. We are off for yet another long beach walk. The dogs love it, they are not going to be happy when back home with a leash and collar.
Thought at first that you were getting the whole wheel of cheese. Rae often mentions how much less expensive it is in Mexico versus Canada. Glad you are getting to enjoy your days.
Love love love soft boiled eggs in a cup! The shrimp burger was the best ever.

Look at those cute little bananas!!! Lovely, lovely sunsets! Good that you get to really relax for awhile!
Love some of those Mexican cheeses, and soft boiled eggs , perfect.
Both links above don’t work. the links have http:// twice.
Thanks Anne, something seems to not be working because I am unable to change that. I do have a computer guru coming by this afternoon and I will add this to the list. Welcome to the comment section of the blog. I really appreciated you comment as I would have had no idea. Thanks so much.
Your ‘computer guru’ is flattered by the title. 🙂
De nada 🙂
Anne, I fixed it :)) Thanks for bringing it to my attention.
Colleen…..certain items are less yet others are more. When you buy cheese like this you just indicate how much you want. Somehow this time I ended up with double what I wanted but it certainly won’t go to waste.
Chris…..then you have to try this perfect way to cook soft boiled eggs. We thought of you guys as we munched down on those burgers.
Dolores…..those bananas are so tasty, we try and only eat those while hear but not always so easy to find.
George…..I do hope you get back here again one day, you never had a chance to experience it all when you were here. So much more to see and do and try.
I’ve been doing soft and hard boiled eggs in that manner for years and not just so that they would be cooked perfectly. I read a report that said if you boil eggs you cook the egg yolk and white in a manner that renders it almost indigestible! That grossed me out and I’ve never boiled an egg since. For hard boiled eggs I just leave them in the water for 15 minutes with oven mitts on top of the pot.
Good to know Kathy. Who would want to eat eggs that have no nutritional value.
Once again great beach photos. I was curious while you are in Mexico what kind of dog food do you feed your dogs? It would be hard to leave that area, although I do know your travel restrictions.
Hola Steve. We carry all of our dog food with us for the entire five months that we are usually here. What we feed the girls cannot be purchased here in Mexico. There really is a limited variety of dog food here. I imagine that with your three that would be a lot to carry with you. Glad you are enjoying the photos.
