To be perfectly honest….

….we are both exhausted 😥   I could push and do a post but that would take about 90 minutes  or more by the time I edit my photos.  I have decided that we need to take tonight for us.  We, well Colin especially has worked double time and a lot has been accomplished in a short period of time.  For the first time in a long while I am physically able to help with many of the tasks and I am enjoying it. We wondered today what the heck we would do once we were totally set up 💡   Not to worry, lots and lots of choices 😉

I worked out today that this will be our 7th winter here.  In 2009 we were in the 3rd row of RV 2 and 12th on the list for a front row site.  Somehow we were able to snag site #3 in 2010, in RV 1, for $100.00 more per month than others were paying, we took it. It was a private lease site and no one else was willing to pay the extra $100.00.  Sorry but to us that is a cheap price to pay for paradise.   Our current site became ours in 2011, mostly because others did not see the potential in this run down site, well it was at the time, but we have certainly changed it.  I honestly am shocked at the amount of time we have spent here in one place, but due to circumstances, ie my two hip replacements and both my parents passing away, this was a great spot to heal.  The future holds many changes for us but not until our fur kids have moved on 🙁

So off I go to create a great dinner centered around the shrimp that was sold to us via a lovely couple in a truck.  It was frozen but once it thawed I found it to be good quality and very fresh on how it peeled.  Hope it tastes the same.  We paid 150 pesos for one kilo with heads on.

By the way, I really would like to know your favorite ways to prepare shrimp, BBQ, fry pan, marinades, spices, etc.

    my favorite way to prepare shrimp is pan fry with garlic and butter, (do not substitute with margarine) lots of garlic and serve on rice. If I am eating out I like it everywhich way they prepare it here, garlic shrimp, coconut shrimp, Shrimp diablo, or shrimp Zarandeado or in a hot shrimp cocktail. Welcome back.

  2. Glad that you are getting yourselves all settled in. It is nice to know that it doesn’t all have to be done at once.

    We like cooking our shrimp in a pad Thai or on kabobs on the BBQ/grill. 🙂

    My favourite shrimp are peeled, deveigned and marinated in Sambal Oelek. Then skewered and barbecued. Served with a nice salad of mixed greens with seeds, nuts and goat cheese, tossed in a dressing made with olive oil, balsamic vinegar and some salt and pepper. Easy peasey!

    My absolute favourite way to cook shrimp is to have Miguel make it into a burrito. 😉

    I wouldn’t bother making my own shrimp here, but I love it marinated in garlic butter (real butter!), then sautéd with a dash of lemon juice. I think that’s how I made them for you when you visited. Also love them boiled in Zatarain crab boil mix (healthy mix of herbs and spices, no salt, no junk) with the shells still on, then served with cocktail sauce. Peeling them is half the fun.

    Pan fried in butter, tossed with tiny bit of Mexican chili, doused with GOOD tequila. Serve up and enjoy!!

  8. Shrimp Kabobs on the grill, pan fried with garlic and butter, shrimp alfredo, like shrimp done pretty well anyway.

    I love them done in a Jambalaya, but whole or butterflied and lightly fried Spot Prawns are a little bit of heaven on a plate. Too bad they’re over $40 a pound in Kelowna.

  10. I always do my shrimp in real butter, a little chopped garlic and a dash of cajun seasoning, with cayenne pepper added if more heat is requested. I also chop bits of red pepper, green onions and mushrooms in with it as they take about the same time to cook. We eat ours over cilantro rice – yummy!
